I'm an "A" veggie girl....artichokes and asparagus are my two all time favorite veggies and aside from corn (not creamed, yuck), it's with excitement that I draw attention to today, Asparagus Day!!! Low in fat and sodium, this veggie is great roasted, on a salad and even marinated! Yummy!! You could read on and on about the benefits of a vegetable, but I'm just happy I like a veggie, any veggie!!
